For an occasional treat, or to serve as grain free dessert alternative, here’s a recipe for apple crumble pie (smulpaj med äpplen). Takes about 30 minutes to prepare.

Turn on oven to 200 deg C

  • 2-3 apples
  • 100 grams of butter or ghee
  • 3 dl almond flour
  • 0,5 dl coconut flour
  • 1 msk/tbsp coconut sugar, or equivalent of other sweetener as desired.
  • pinch of cinnamon, pure vanilla powder

1 dl = 0.422675284 US cups

Peel, halve and core the apples. Cut each half into wedges and spread evenly on buttered oven-safe pie dish. Sprinkle cinnamon and coconut sugar over each layer of apple wedges.

Crumble:
Mix the dry ingredients first. Add the butter and mix to crumble texture. Add butter if more moisture is needed. Add more almond flour if more crumbling is needed. When satisfied with the texture, spread evenly over apple wedges.

Bake for about 20 min. Check on the pie during baking and cover with foil (without it touching the pie) if it looks like the crumble may burn.

Serve as is or with low carb vanilla ice cream, or low carb vanilla sauce.
